Recipes & Secrets: Mock Apple Bars
Wondering what to do with those oversized zucchini? This recipe is a hand-me-down from Cindy's side of the family. People still think it's apple when they taste it!
Directions
- Mix flour, nuts, and sugars together. Cut in butter. Press 1/2 of crust mixture in 11 x 16 inch pan or cookie sheet. Bake at 375° for 10 mintes.
- Cut zucchini into bite-sized pieces and cook in lemon juice until tender, about 20 minutes or more. Then add sugar and spices. Simmer 1 minute. Add 1/2 cup crust mixture to thicken. Place filling over baked crust.
- Add 1 teaspoon cinnamon to remaining crust mixture and sprinkle over filling. Bake at 375° for 30 to 40 minutes until golden.
